Sourdough Waffles

We have an ongoing group chat about sourdough adventures. One friend shared a photo of their sourdough waffles and we knew we had to try them. We doubled the recipe so we could have some in the freezer to pop into the toaster. The recipe is from Alton Brown on the Food Network.

Ingredients

  • 125 g sourdough starter

  • 170 g BCF Partially Sifted Flour

  • 1 cup whole milk

  • 1 large egg, separated

  • 1 tbsp sugar

  • 4 tbsp butter, melted

  • 1 tsp salt

  • 1/4 tsp cream of tartar

Method

  1. Mix together sourdough starter, milk and flour. Let rest for 8 hours or in the fridge overnight.

  2. Add egg yolk, butter, sugar and salt to the sourdough mixture. Mix gently until combined.

  3. Beat egg whites and cream of tartar together until soft peaks form.

  4. Gently fold in the egg whites into the dough.

  5. Heat the waffle iron and cook according to your iron’s directions.

Try Our Barley Pancake Mix

Barley Pancakes have a slightly nuttier taste to them. Enjoy them classically made with some local Birch Syrup or topped with freshly made strawberry sauce. 

Strawberry Banana Pancakes

Replace half of the milk with strawberry yoghurt. Add in a ripe mashed banana to the batter. Serve with sliced strawberries. 

Maple Pecan Pancakes

Add ¼ cup pure maple syrup (or more to taste) and ½ cup toasted pecans to the batter. No need to serve with syrup – maybe just a dusting of icing sugar!

Buckwheat Apple Cake

Buckwheat flour has a very distinct flavour (think of buckwheat honey) which pairs well with the cinnamon and apples that this recipe calls for. We've had it for both dessert or breakfast. 

1/2 cup butter
3/4 cup sugar
4 eggs
2 cups buckwheat flour
1 1/2 tsp baking powder
1 tsp cinnamon
2 tsp vanilla
6 medium apples peeled and roughly chopped

Preheat oven to 325°F. Beat together the butter and sugar until fluffy. Add in the eggs one at a time. Mix in the vanilla, baking powder, cinnamon and buckwheat flour until well mixed. Finally, fold in the apples. Pour batter into a greased cake or loaf pan. Bake for about 1 hour or until a toothpick comes out clean.

Substitute the milk in the mix with strawberry yoghurt. Add 1/3 cup blueberries, 1/3 cup raspberries and 1/3 cup chopped walnuts. Sprinkle the top of the muffins with oats before baking.
